Mom's Ricotta Cheesecake

Ricotta Cheese Cake
Pie Crust:
2 cups flour
3/4 cup butter, at room temperature
4 egg yolks, beaten slightly
1/2 cup sugar
2 Tablespoons Marsala wine
1 teaspoon grated lemon rind
1/2 teaspoon salt
1 beaten egg white
1 Tablespoon lightly toasted pine nuts
Beat the butter and sugar until well mixed. Add the eggs,
lemon rind and salt and beat well. Add the wine and stir
well. Stir in the flour with a wooden spoon, and knead
lightly just until mixed. The dough will be soft and
sticky. Refrigerate for an hour or until it can be
handled. Roll out the dough on a lightly floured surface.
If the dough begins to stick to the surface, lift it up and
sprinkle a little more flour under it. Lift the dough into
a 10" cheesecake pan with removable rim. Run the rolling
pin firmly across the top of the pan, to remove the excess
dough. Roll out the excess dough into a rectangle, and cut
it into long strips to use as a lattice on top of the
cheese cake.
Ricotta Filling:
3 pounds Ricotta Cheese
1 cup granulated sugar
1 1/2 teaspoons vanilla extract
4 whole eggs, beaten
1 Tablespoon flour
2 Tablespoons lightly toasted pine nuts
(1 Tablespoon white raisins, optional)
Beat the eggs and sugar until well mixed. Add the ricotta
and beat for 3-5 more minutes. Stir in the vanilla
extract, flour and 2 Tablespoons of the pine nuts, and the
raisins if you are using them.
Pour the filling into the shell, and make a cross-lattice
by laying one strip across the middle of the cake, and then
crossing it from the other direction. Continue to lay
strips, lifting the strips as they cross. Brush the
lattice with the beaten egg white, and sprinkle with the
Tablespoon of pine nuts.
Bake at 350F for 1 1/2 hours. Remove from the oven and let
cool on a rack. When cool, carefully remove the rim and
refrigerate the cake. Serve chilled.

"Facebook Timeline has begun rolling out to all users of the
social network, with all members expected to be upgraded to
the new layout within the "next few weeks." The new profile
style - necessary for Facebook’s new "Open Graph" Timeline
Apps to work - pulls your entire Facebook history into a
chronological layout; users will get seven days to finesse
the page, making sure no details they don’t want to share
publicly are visible, before it activates automatically."

Some Things You Should Know about FaceBook

Facebook's timeline is their new replacement for your home
page, or profile page. This time line is a
reverse-chronological history of everything you've posted
on Facebook as well as a display of other life events that
you've recorded there... such as job history, friends,
photos, status updates, .. well anything you've provided
since you logged into FaceBook.
This new "feature" replaces and combines a user's Facebook
"Wall" and "Profile" pages and as it stands right now, will
be non-optional.
I haven't seen a specific date give for when everyone will
have this feature enabled, but given the way facebook
normally does things, I expect it will be turned on for
lots or batches of users. Various sources have indicated
that the time frame for this overall Facebook
implementation will be 'soon'.
Once You Turn it On:
From what I've read, once you start using it you'll have 7
days to delete anything you don't want made "publically
available" on your timeline... but once you turn your
timeline on, you _can't_ turn it off. It's there to stay.
After You Turn it On:
Now when you log into facebook, you'll still see the normal
"feed page".. but when users or you yourself go to what
was your facebook profile or home page, you and they
will see your timeline. People can "page back" as far as
they'd like into your timeline history.
FaceBook notes that this feature will integrate with 3rd
party companies so that was enough for me to say, "No
Thanks FB, I'm OUTTA HERE"
Paranoid of me? Perhaps.. but I don't need FaceBook
tracking my purchases, my travel, and yes.. even FaceBook
Chat. They know where you travel via the web because of
cookies they've installed - even if you are not logged into
FaceBook.

How to Delete Your Account on FaceBook:
Note! It takes 14 days for Facebook to officially delete
your account. If you log into your account before those 14
days are up you’ll need to restart your account delete
process. This is the most complicated part of the process,
especially if you have used another site to log onto
FaceBook.
So my advice is to first, make a list of any sites which
are not FaceBook itself that uses the "connect" feature.
Go each of those sites and close your account there,
because if you log into any of them over the 14 day period
you’ll have to remove your FaceBook account again. You can
always recreate those accounts later.
Quick and Simple:
If you've never logged onto FaceBook from another Web site,
you can probably just follow these instructions to delete
your account. Keep in mind though the same 14 day "crap"
period applies, so if in that 14 day time period you go
back to FaceBook, your account will be automatically
re-instated.
Step 1. Go to http://www.facebook.com
Step 2. Enter your email and password and sign into your
current account.
Step 3. Once you are on the Main Page, up in the TOP RIGHT
corner of the screen, there is a an Account
prompt.
Click on "Account" and a drop-down menu
is displayed.
Click on "Account Settings".
Step 4. Find "Deactivate Account" on the bottom of the
next screen. Click "deactivate" (Note: Continue,
because you are NOT deativated yet ).
Step 5. On the next screen, Facebook asks you why you are
deactivating your account and gives you a list of
choices, with an option to explain further if you
care to do so. I let them know I wasn't happy
with being forced into using the timeline .
I was polite against my better judgement Lol.
Importantly, you can also opt out of emails from
Facebook pals, etc. so you should probably mark
this as well. If you don't you'll still get
emails from facebook regarding invites, tags, etc.
Step 6. You'll be told something like, "You are about to
permanently delete your account. Are you sure?"
Enter your password and the captcha graphic image
on the page, and when ready click "Okay".
Your account will now be cancelled... BUT remember
if you go back to FaceBook for anything in that 14
day period, you'll have to start with #1 again :)
FaceBook Follows You Online Even when You are Logged Out
We all know that sites use cookies and FaceBook is no
different.. ANY page you go to with FaceBook tools, icons,
buttons, whatever, will capture your activity and then send
it FaceBook.
I think this is totally unacceptable. To stop this
behavior by sites I visit, the cookies must be deleted.
Here's how I did it:
(I use FireFox, but I expect most browsers will be somewhat
the same as far as removing cookies go)
Go to FireFox->Edit->Preferences in the top menu.
Click on Privacy.
Click on "remove individual cookies"
Type facebook in the seach bar. All the cookies that
FaceBook uses to track you will be displayed.
Hold down the shift key and click on each Facebook cookie
to select all of them at once. Click on "remove
cookies."
Ah.. that felt almost as good as deleting my FaceBook
Account.

FidoNews Article Submission (Updated December, 2011)
FidoNews, founded in early 1984, is the newsletter of the FidoNet
computer network, for both its Sysops and users. It is passed to
its readers electronically via the FidoNet and other computer
networks and to non-network readers as well as to the InterNet.
Fidonews welcomes articles, editorials, and features of interest
to the Fidonet Community. To have your article included in
Fidonews, simply send it via netmail to 1:261/1406 or 1:1/1.
Here are some guidelines you can use to help me make it easier to
format your article for Fidonews:
1. Use standard ASCII text. Most word processor formats can't be
used by the Fidonews software. In addition, the Fidonews software
won't accept most ASCII control characters nor any characters above
ASCII 127 (this, unfortunately, includes all those neat box drawing
characters).
2. Start your lines at the left of your screen when typing. The
software puts in a left margin automatically, and I have to manually
remove any left margin appearing in your document.
3. Keep your line length to under 70 columns for tables or charts
(or if you include an ASCII illustration). Regular paragraphs
exceeding this 70 column limit can be reformatted during the editing
process, but tables and charts are normally distorted beyond
recognition by a simple reformatting.
4. Separate paragraphs with a blank line. This is how my text
editor recognizes paragraph endings, so I have to add blank lines
manually if you don't.
5. Title your article as you'd like to see it in the Table of
Contents. If you don't, I'll make up a title for you, but I'd
rather have the article appear as you wish.
6. Include your name and node number (or internet address) under
the title. I'll grab it from your message, if necessary... but,
again, I'd rather have the article appear as you wish.
7. Check your own spelling and wording. Though I feel free to
reformat your article so it conforms to technical requirements, I
generally leave the wording (and spelling) alone as I don't want to
distort what you have to say.
8. Send your article before Sunday in order to see it in that
Monday's edition. Normally I put the newsletter together Sunday
Evening and send it out... and I normally check email and netmail
before I finalize the edition. So if I get your article before
Sunday evening, I'll include it... but send it by Saturday to be
safe :)
9. If you're not sure whether you should write or send in your
article, I would encourage you to send it anyway. Chances are, if
you write of something of interest to yourself, it'll be of interest
to others. Besides, Fidonews is a better publication when it's
written by a variety of people :)
